Daniel celebrates Christmas with the bistro staff.

Daniel's Bistro is owned by Daniel Vencker. A Frenchman from the Alsace area and from the city of Strasbourg, near Switzerland and Germany. Graduated from the the Ecole de Commerce and trained at the six star Grand Hotel du Cap Ferrat near Monte Carlo. Daniel has been in Edinburgh for the past twenty-six years and has owned restaurants in the city for the past twenty-four years.

Daniel is a founder member of the Edinburgh Restaurateurs' Association.

The kitchen team - led by Head Chef Denis Guilloneau.

Denis Guilloneau has been a central part of the team at Daniel's since the Bistro first opened in Leith, eight years ago. He is also a native of France.

Alison Guilloneau has worked at Daniel's for the past 6 years. She started as a keen and enthusiastic waitress and worked her way right up to the top. She is now deservedly in a position in which she truly excels. Keen, alert and very professional, she is the smile that greets people as they come in.

She is a former Scottish hurdles champion, and the mother of two.
